I think the options are either Mirio or Izuku.
That being said, EMIYA's projection not only allows him to copy the enemy's fighting style when he project their weapon, he can also temporary copy their stats/parameters if I recall correctly. That means that Izuku can be as strong as Heracles without the aid of OfA, allowing you to power up other character with OfA instead.

OFA will allow Izuku to use UBW easier (UBW is extremely draining) so he can get it around the Sports Festival.

as interesting as the premise is, you should really research into mysteries and their interactions against the mundane. I would argue that you could make all quirks imbued with mystery. I would also suggest that all people in your story possess the ability to manipulate od, prana, etc, with its respective research done, since you have set the standard that a slime villain can stand up to the married blades. lastly, I would like to announce that you choose a different way in which midoriya gains archers power. perhaps he is conveniently upon a layline which might have powered a grail war summoning in the past. perhaps the town that midoriya lives in was in fact fuyuki, in the distant past. the current premise feels too shoehorned.
