I am a stay at home mom of 2 boys, hence the screen name. I love to read and I am starting to write. I like to review stories and I may even think of being a Beta. I'm not sure if I will post any of my own stories on here. I am a little nervous about that, but I will work on it. I absolutely love the Twilight Series!! I just can't wait until August when Breaking Dawn comes out. This is how I spend my time until it comes out. I am also looking foward to the movie. I love and I am always lurking there. That is pretty much it for me. I look foward to reading a lot of great stories on here!

Okay, here are a few recipes that I love to make and that will either make an appearance in my story or already have. I will add more as I think of them. If you haven't already noticed, I love to bake!

Honey Balsamic Chicken

4 skinless, boneless chicken breast halves, cut into bite size pieces

1/2 t. salt

1/4 t. pepper

2 t. olive oil

2 T. balsamic vinegar

1 T. honey

2 T. chopped fresh or 2 t. dried basil

Sprinkle chicken with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 5 minutes or until lightly browned. Turn chicken and cook 6 minutes or until chicken is done. Stir in vinegar, honey, and basil; cook 1 minute.

I serve this over jasmine rice and I add a frozen stir fry veggie mix to add color and nutrients. This is a Weight Watchers recipe so it is really healthy and yummy. My kids love this dish, so it must be good! Enjoy!

My Grandma Wilde's Rolls (anyone can make these!)

1/2 c. shortning (melt on low heat)

2 T. yeast mixed with 1c. warm water (not too hot) and 2 t. sugar (let proof 10 minutes)

3 eggs (well beaten)

1/2 c. sugar

2 t. salt

1 1/2 c. water (cool not cold)

7 c. flour (may need more depending on where you live. If too sticky add another 1/2 to 1 cup)

Melt the shortning and put it in the mixer. Add the sugar, salt and water. Make sure the mixture isn't too hot before adding the yeast and eggs. Add flour a little at a time. If you have a kitchen aid or a mixer like it let it knead in the mixer for at least 10 minutes. If not knead on a flat surface when it gets to be too much for the mixer.

Let the dough raise for 1-2 hours. Punch it down and grab enough dough to roll it out to a small pizza size. Spread butter on it once it is rolled. Use a pizza cutter to cut it like a pizza. Roll each piece up like a croissant roll and put on a baking sheet. Let this raise for another 1-2 hours.

Bake at 350 degrees for 8-10 minutes or until golden brown on top and bottom. When they come out of the oven rub butter on the tops so that it melts. These are so yummy and although it looks like it is a lot of work, it really isn't. Enjoy!
